Sweet Potato Pudding

I have been in the food business for a little while now and acquired knowledge and experience which are responsible for my realizing that some things cannot be duplicated.

My grandmother Corona Frederick had a way of making blueberry muffins that I still cannot reproduce. I really miss the days of waking up to the smell of her blueberry muffins. I never got my grandmother to reveal how she made them, but I can share her recipe for sweet potato pudding with you.

• 1 Of Cup Sugar
• 2/3 Of Cup of Butter
• 2 Eggs Beaten
• 2 Cups of Raw Sweet Potatoes
• 1 Orange ~ Grate The Rind Only
• ½ Teaspoon of Powdered Ginger
• ½ Teaspoon of Mace
• ½ Cup of Milk
• Dash of Cinnamon

Pre-Heat oven to 350ยบ.

• Mix butter and sugar until creamy.
• Add beaten eggs to the butter and sugar.
• Add grated sweet potatoes and orange peel.
• Add milk and spices.
• Bake for one hour.

This will make an excellent side dish or dessert. Enjoy!
